RECIPE: pineapple 2 ways

PINEAPPLE/FINEAPPLE! One of my favourite fruits in the world. Goes so perfect in both sweet and savoury dishes and that's exactly what I'm going to show you today; 2 pineapple recipes, 1 sweet, 1 savoury. LEGGOOOOO (Step by step video is right at the bottom of the page)

FIRST RECIPE: smoothie bowl

 
Ingredients: (for 1 person)

- 1/2 a pineapple
- 2 ripe bananas
- 1 apple
- blueberries
- spirulina (optional)

Method:
- Cut the pineapple (see video below for "how to"), bananas and apple
- Place the fruit into your blender with 1/2 a cup of water or enough for it to blend properly
- Add 1/2 a teaspoon on spirulina
- Blend until smooth

You can drink it like this, but if you'd like it in a bowl keep following the instructions

- Place the smoothie into a bowl and top with sunflower seeds, sesame seeds, dessicated coconut and chia seeds

RECIPE 1 DONE

SECOND RECIPE: quinoa salad with pineapple
If you're like me and love sweet/salt taste together, this recipe is perfection


Ingredients: (for 1 person)
- 1/2 a pineapple
- Tomato
- Cucumber
- Avocado
- Quinoa
- Cayenne pepper & salt (for seasoning)
- Cannellini beans (any beans work here, just make sure they are COOKED)
- Olives (optional)

- Sauerkraut (optional)

Method:
- Add 1 cup of water over a medium heat
- Place 1 stock cube into the water and bring to boil
- Wash 1/2 cup of quinoa and, once the water starts bubbling, add it into the pot. Bring the heat down low, cover the pot and simmer for 15-20 minutes
- Drain the beans
- Cut the pineapple ("how to" in the video below), avocado, tomato and cucumber
- In a bowl, add the quinoa, beans, avocado, tomato and cucumber. Mix together
- Add 1/2 a teaspoon of cayenne pepper (or more if you like spice) and salt to taste. Mix again
- Place the pineapple chunks on top
- Add olives and sauerkraut (optional)
