VEGAN ENCHILADAS

Transitioning to a vegan lifestyle is not the easiest thing to do; your taste buds are all over the place and getting accustomed to eating plant foods can sometimes be challenging. BUT with recipes like this, being vegan has never been easier.

I used to miss cheese SO MUCH
when I first went plant based, but this cheesy, enchilada recipe really satisfied those cravings (and still does!) The written recipe is below and full video is right at the bottom of the page xx

 
INGREDIENTS: (Yields 2 servings)
2 onions
1 sweet potato (medium)
1 can pinto beans
Coconut oil
1 clove of garlic
Passata (optional)
Tortilla wraps
Cashew cheese (recipe here)

METHOD:
1. Cut up onion and sweet potato into strips
2. Place on a baking tray and add salt, oregano, garam masala, haldi and olive oil and mix together using hands so all the seasoning is even
3. Place in a preheated oven at 200 degrees C for 20 minutes (or until soft all the way through). As they are cooking, make the refried beans

REFRIED BEANS:
4. Drain pinto beans
5. In a pan over a medium heat, add coconut oil and 1 clove of garlic
6. Just before the garlic turns brown, add half a chopped onion, salt and garam masala. Let it cook for a few minutes
7. Add in the drained pinto beans and mix. You can add a splash of water if it gets too thick
8. Add a few drops of passata (optional)
9. Once it starts to thicken up a bit, take it off the heat and using a fork or potato masher, roughly mash the mixture together

 
ASSEMBLE YOUR MASTERPIECE:
10. In your tortilla wrap, spread the refried beans generously, add the sweet potato and onions and wrap up tight
11. Place in a deep dish and repeat until all the fillings are finished
12. Add passata and dairy free cheese of your choice; I used my classic cashew cheese sauce (click here to see that recipe)
14. Sprinkle pepper on top and place in the oven at 200 degrees C for around 30 minutes



TO SERVE:
Goes perfect with avocado and a splash of lime
